Brownies With a Twist

Oh yum... lovely, lovely chocolatey yummyness! This next recipe is made up of my three all time favourite flavours, so as you can imagine it is pretty special. This heavenly combo is made up of one layer of brownie, next layer peanut butter dough, and the final layer is made up of chocolate and peanut butter topping. It only takes a little more time but the result... well worth it! This cake is too good not to enjoy, try for yourself and I dare you to only have one piece! xxx

Layered Brownie


For the brownie
Ingredients:
  • 285g Dark Chocolate (The recipe says at least 70% coco solids but I've never used that stronger chocolate! Mine is normally about 54%)
  • 115g Unsalted butter, plus extra for greasing
  • 450g Soft light brown sugar
  • 6 Large eggs
  • 1 Tablespoon of good quality vanilla extract
  • 160g Plain flour
  • 1 Tablespoon of baking powder
Method:

Preheat oven to 150c/gas mark 2. Grease and line your baking tin and set aside for later. Melt your dark chocolate and butter in a glass bowl over a pan of simmering water. Leave to cool.

Put the sugar into a large bowl. In a small bowl beat the eggs and vanilla extract until combined, and add to the sugar. I find that the mix is often quite lumpy, but just keep mixing and it will smooth out. Set the bowl aside, and take this time to chop your hazelnuts and chocolate into medium sized pieces. Now your melted butter and dark chocolate should be cool, add this to the sugar and eggs and mix well until fully combined. Sieve in your flour and stir again! Finally pour into your tray

For the Peanut Butter Filling:

Ingredients:
  • 50g Dark Muscavado Sugar
  • 200g Icing Sugar
  • 50g Unsalted Butter
  • 200g Smooth Peanut Butter 
Method:
Put all the ingredients for the base into the bowl of your electric mixer and beat until smooth (alternatively you could do this with a wooden spoon in a regular bowl). Press the dough onto the brownie, (try and get it as smooth as possible) then set aside.

For the Topping:
Ingredients:

  • 200g Dark Chocolate
  • 200g Smooth Peanut butter
  • 1 Tablespoon softened butter
Method:
Melt all the ingredients in a bowl over the a pan of simmering water, once all melted and smooth spread over the peanut butter dough. Leave to cool somewhere cold, then put into the fridge to cool and set completely. Once set, slice with a large knife and enjoy xxx

    1. The tray was around 12"x 8" and 1" deep, but one a little deeper wouldn't go a miss because it does get very full... hope you enjoy! :) xx

    I love to bake, but I´m so lazy! You inspire me to change that and start baking! :)
