Chilli Chocolate Puds

Anyone else noticed the recent craze for chilli chocolate? I have to admit that I am definitely part  of the chilli chocolate lovers club, dark chocolate with a little bit of spice; what's not to like? So this next bake is a little more showy than the usual muffins, cookies, or cupcakes but they really are simple! The end result is lovely, not too spicy, really moist and gooey, served with whipped cocoa cream, they're a real treat! Try for yourself and enjoy a little post snow melt (sad face) indulgence xxx

Chilli Chocolate Puds Adapted From McCormick Gourmet Collection Recipes

Ingredients:

  • 130g Plain Flour
  • 200g Caster Sugar
  • 6 Tablespoons of Cocoa powder
  • 2 Teaspoons of baking powder
  • 2 Teaspoons of Chilli powder
  • 1 Teaspoon of Cinnamon
  • 120ml Milk
  • 60ml Vegetable Oil
  • 1 Teaspoon of Vanilla Essence
  • 250ml Boiling water
Method:
Pre-heat the oven to 180c/350f
Grease the 6 ramekins and set aside. Next mix the flour, 135g Sugar, 4 tablespoons of cocoa powder, baking powder, chilli powder and cinnamon in a large bowl. Stir in the milk, oil and vanilla. Spoon evenly into the ramekins and set aside. Put the kettle on, in a small bowl mix the remaining sugar and cocoa powder. Cover the chocolate batter with a tablespoon of this sugar mix, DO NOT STIR, (you probably wont use all the sugar/cocoa powder, this is normal) Next spoon two tablespoons of boiling water over the sugar, you should now have three layers. DO NOT STIR. Place the ramekins into the oven for 15-20mins on the middle shelf or until they are dry to touch. Sere warm with whipped cream.
