Chocolate Chip Shortbread

Well, life is slowly regaining normality. The snow has stopped, but more is scheduled for Friday so I wouldn't say the snowy days are over. Anyway, while we wait for the on coming snow, we can stuff our faces with tasty treats! Here is just one option: Chocolate chip shortbread. Inspired by the lovely and rather funny Great Comic Relief Bake-off!  The recipe is an adaptation of that in the primrose bakery book. Enjoy! xx

Shortbread- Adaptation of The Primrose Bakery Shortbread
Ingredients:

  • 125g Icing Sugar
  • 225g Plain Flour
  • 125g Cornflour
  • 225g Softened butter
  • 150g Chocolate chips
  • A little Caster sugar
Method:
Pre-heat the oven to 180c.
Start by sifting the icing sugar and both flours into the bowl of a free standing mixer, add the butter and chocolate chips then beat slowly.  When the dough has come together, stop beating and turn it out onto a flour surface, knead very briefly. Press into a brownie tray and mark out where you want to cut the biscuits next prick with a fork and place into the oven for 25 minutes. Check, it might need more time but DO NOT OVER BAKE! The biscuits are done when the edges are browned, sprinkle over with the sugar and leave to cool in the tray. Once cool slice up, following the marked out lines. Enjoy xxx
