Bakes of Christmas #7

The seventh bake is... Muffins! Not fancy, not glamorous, but damn tasty! These ones are banana and chocolate but you could make them in any flavour you like! Muffins are such a tasty treat, perfect for a cold night in. You could try, white chocolate and cranberry, maple and pecan, coffee and walnut, or just double chocolate! Here's a picture of them! xxxx

 Banana and Chocolate Muffins- From Muffins Fast and Fantastic by Susan Reimer

Ingredients:

  • 280g Plain flour
  • 1 Teaspoon of Baking Powder
  • 1 Teaspoon of Bicarbonate of Soda
  • 3 Large and well ripened bananas
  • 110g Caster Sugar
  • 1 Egg (Beaten)
  • 75ml Milk
  • 90ml Vegetable Oil
  • 85g Chocolate chunks
Method:
Pre-heat your oven to 190c.
Begin by sieving the flour, baking powder, and bicarbonate of soda into a large bowl and adding the chocolate chips. IN a separate bowl mash the bananas (thoroughly) and then mix
in the sugar, milk, and oil. Make a well in the centre of the dry ingredients and pour in the wet ingredients fold together until evenly mixed (a few lumps are fine) spoon into muffin cases and bake for 20-25 mins! Enjoy with hot mug of tea xxx
