Bakes of Christmas #6

The half way point of the 12 bakes of Christmas  is... spiced cinnamon and raisin scones! Lovely, simple Christmas food! My history with scones is a little sketchy so when these beauties came out the oven it was more relief than excitement, they smelt and tasted gorgeous, try some for yourself. You can always experiment with the spices or fruit to get a different flavour, think Christmassy and tasty! What could possibly go wrong? xxxx

Cinnamon and Raisin Scones (adapted from RTE Cinnamon and Raisin Scones)

Ingredients:
  • 500g Plain flour
  • 2 tsp baking powder
  • 1/4 Tsp Cinnamon
  • 1/4 Tsp Nutmeg
  • 2 tblsp Any sugar
  • 110 g butter
  • 150g Raisins
  • 300 ml milk
  • 3 tblsp sugar mixed with 1/2 tsp cinnamon
Method:
Pre-heat the oven to 200c
Sieve the flour, baking powder, cinnamon and nutmeg into a large bowl, then stir in the sugar. Add the butter and rub with your finger tips until the mix resembles breadcrumbs. Stir in the raisins and then gradually add the milk until you have a soft dough (DON'T ADD IT IN ONE GO BECAUSE YOU PROBABLY WONT NED ALL OF IT!) Turn the dough out onto a floured surface and knead well for around five minutes (or until you have clear layers in your dough) Roll the dough to around 3.5 cm thick, cut out with a round cutter of your choice and bake in the oven for 20 mins. xxxx
