Bakes of Christmas #3

The third bake of Christmas is... Chocolate Yule log! Yes, yes, I know... I said I wasn't going to do the "classics" but this couldn't be the twelve bakes of Christmas without a Yule log! There's not much to say except that its delicious, but you probably already knew that; and if you've never tried one then... shame on you! No; only kidding, but you seriously need to make because its so easy and absolutely heavenly! xxxx

Chocolate Yule Log

Ingredients:

Cake
  • 6 medium eggs (separated)
  • 150g caster sugar
  • 50g best cocoa powder
  • 1tsp vanilla extract
  • 4tsps icing sugar (to decorate)
Icing
  • 100g Butter (softened)
  • 250g Icing Sugar
Method:
Preheat the oven to 180°C then (in a large, clean bowl) whisk the egg whites until thick and peaking. Add 50g of caster sugar and continue to beat until soft peaks form. In another bowl, whisk the egg yolks and the remaining caster sugar until the mixture is moussy, pale and thick. Add the vanilla extract, then sieve in the cocoa powder and fold carefully into the egg yolk mixture. Add 2 large spoonfuls of beaten egg whites to beaten egg yolks being careful to fold the mixture in gently. Then continue to fold in remainder of egg whites mixing thoroughly.Next line a Swiss roll tin with baking parchment and pour the cake mixture into the tin and bake in the oven for just under 20 minutes until sponge is springy to the touch. Leave the cake to cool whith in the tin and then turn it out onto a sheet of baking parchment, spread with your butter icing and roll carefully! To finish sprinkle with icing sugar and enjoy! xxxxx
