Bakes of Christmas #2

My second bake of Christmas is...  Christmas muffins! They're so easy and uber tasty, the recipe suggests you make then as mini muffins but I couldn't find my mini tray... so mine are (as you've probably noticed...) just Christmas Muffins! I have to say though that the muffins themselves were really easy but the decorations.. not so much! I don't have a mini holly leaf cutter, so had to make every single little leaf by hand(!), with a teaspoon; never again!! Aside from that these were really good fun, getting really Christmassy round here now! Two down ten to go! xxx

Christmas Muffins
Ingredients:
  • 200g self-raising flour
  • 100g golden caster sugar 
  • 100ml sunflower oil 
  • 75ml milk 
  • 1 large free-range egg 
  • 50g good quality dark chocolate, chopped 
  • 1 heaped tbsp mincemeat 
  • 50g white chocolate chopped
  • 50g dried cranberries
Method:
Preheat the oven to 190C/375F/Gas 5 and line 18 muffin holes. To begin mix the flour and sugar in a bowl, then make a well in the centre, set aside. Whisk together the oil, milk and egg and slowly pour into the bowl, stirring gently. Divide this mixture into two. In one bowl add the dark chocolate and mincemeat. Add the white chocolate and cranberries to the other bowl. Stir very gently. Spoon the two mixtures among the muffin cases and bake for 20 minutes or until golden brown and risen. To decorate use ready roll icing to create green holly leaves and berries on a bed of snow (white ready roll icing). Enjoy!! xxx
