Banana and Chocolate chip Oatie Muffins

Today's been one of those grey days; nothing much happening, not sure what to do; the weather's all grey, so outside doesn't seen all that appealing and there was some, rather, old bananas wasting away in the fruit bowl (urg.) so there was only one thing to do; banana muffins!

I wasn't feeling particularly adventurous so I just decided to stick with a recipe from "The Muffin Book" (Muffins-Fast and Fantastic by Susan Reimer, think I've talked about it before?) I say this in "quotations" because it is the only muffin book I own and the only one I have ever used; it's really good so I don't see any point in buying another! Anyway, in the end I went with Banana and Oat muffins, adding the optional chocolate chips. I'm really glad I did just stick simple because they are heavenly; I swear I was nearly drooling as the baked, the smell was gorgeous! They aren't dainty but who cares, it's the taste that counts!

Lets hope the weather cheers up soon, but until then cheer yourself up with these tasty muffins. xxx

Banana and Chocolate chip Oatie Muffins- Muffins, Fast and Fantastic by Susan Reimer
Ingredients:
  • 225g Plain Flour
  • 1 Teaspoon Baking powder
  • 1 Teaspoon Bicarbonate of Soda
  • 3 Well ripened bananas
  • 110g Caster Sugar
  • 1 Egg (beaten)
  • 75ml Milk
  • 90ml Vegetable Oil/80g Butter (melted)
  • 60g Rolled Oats
  • 100g Chocolate chips (flavour up to you)
Pre-heat your oven to 190c
Start by sieving the flour, baking powder and bicarbonate of soda into a large bowl and stirring in the chocolate chips. Then in a separate bowl mash the bananas and stir in  the sugar, milk, oil, egg, and oats, mix well. Finally gently fold into the dry ingredients (DO NOT OVER MIX) you are done when the flour is no longer visible, there will still be some lumps but that is ok. Spoon into muffin cases and bake for around 20 mins.

  1. Hiya Alex, i've been thinking about bananas for a while....but get put of by the not knowing if its completely cooked because of the moisture from the bananas. Do u have this prob or is it just me? Bet yours were yum.

    1. hmmmm, I've never really had an issue with them being too gooey but that might be that I don't use that many bananas in my muffins (It suggests 400g I only put in 250g) The only thing I can suggest is less banana and possibly check your oven temperature xxx hope this helped? xxx
