Well, I'm not really a valentines day kinda girl but this is my designated "Valentines Day bake". That doesn't mean if you bake them they must be for Valentines day, alternatively you could just make them because they're tasty. The cupcakes are iced with white chocolate frosting from the Primrose bakery book, you could just use regular butter icing but the white chocolate is a lovely alternative.They're not flash or complicated but it's simple and effective, anyone and everyone likes cupcakes so you cant really go wrong. By adding the white chocolate frosting the cupcakes become a little bit more special.

Celebration Cupcakes From The Great British Bake-off (2011)Ingredients:
- 175g Self raising flour
- 125g Butter (softened)
- 175g Caster sugar
- 2 Medium eggs
- 1 Generous teaspoon of (good) vanilla essence
- Cupcake cases
- 12 Hole muffin tray
Method:Start by beating the butter until smooth, then beat in the sugar. In a big mug whisk the eggs and vanilla essence until combined. Add (slowly) to the butter and sugar (add it in gradually so that it doesn't curdle, if it does, just carry on and when you add the flour it should be fine) then finally sieve in the flour and fold gently until fully combined before spooning (about one and a half tablespoons each) into your cases and placing in the oven for 18mins. Finite! xx
Icing:
- 1 Batch of vanilla butter icing
- 200g Melted White chocolate
- 6 TAblespoons of Double cream
Make sure your butter icing is smooth, then add the melted chocolate and double cream. Beat for 3 or 4 minutes, on a high speed until light and fluffy. If its a little too runny put into the fridge and then take out in a bit. Pipe onto your cupcakes, then decorate with love themed decorations xx
