Iced Biscuits
Just a note on this recipe. In the recipe book (The Primrose Bakery and Nigella Lawson- How to be a domestic goddess) it states that you need 400g plain flour, but when I made them, the dough was so sticky I don't even think it classed as a dough! So I added in more flour, quite a lot more four actually! On the recipe I have put 420g but that's just an approximation! You may need more or less so add it gradually, Enjoy! xx
Ingredients:
- 175g Unsalted butter
- 200g Caster sugar
- 2 Large eggs
- 1 Teaspoon vanilla essence
- 420g (!?) Plain flour
- 1 Teaspoon baking powder
- Biscuit cutters (of your choice)
- 2/3 Baking trays, greased and lined
First, cream the butter and sugar until smooth, then beat in the eggs and vanilla essence. Slowly sieve in the dry ingredients (sugar, flour, and baking powder) mix gently; first with a wooden spoon and then with your hand. If the mix is too sticky just add more flour, but only a little at a time because otherwise your dough could end up too tough! half your dough and wrap the two halves in cling-film and place in the fridge for around half an hour. Pre-heat your oven to 180c whilst they are in the fridge. Flour your surface and your rolling pin then roll out one of the halves of dough to around 1/2cm thick. Cut out your shapes using up all the dough before moving on to the second half, repeat the rolling and cutting with that half. Finally place your trays of biscuits into the oven for 8-10 mins (check), they might need a little longer. Cool the biscuits on a wire rack and ice with a simple icing made from water, food colouring, and icing sugar!
