Chocolate chip and Walnut banana loaf
Ingredients:
- 4 Ripe- Over ripe bananas
- 250g Caster sugar
- 2 Eggs
- 150g Softened butter
- 250g Plain flour
- 2 Tsp of Baking powder
- 100g Walnut pieces
- 100g Chocolate pieces
Method:
Pre-heat your oven to 180c and line one loaf tin with greaseproof paper. First (in either the bowl of your electric mixer or just in a large bowl) mash the bananas with the sugar until combined. Next add the eggs and mix well with your electric whisk, add the butter and continue to whisk for a couple more minutes. Using a spatula fold in the flour, make sure there is not any hidden pockets of flour. Set this aside. Chop your walnuts and chocolate into small pieces then add them too your mix, give the batter one last mix and then pour into your tin and place onto the middle shelf of your oven. Check your cake after one hour using a skewer you can see if it is cooked, if the top of your cake is beginning to burn but the inside not cooked then cover the tin with foil and place back in the oven for a further 15mins.
